INGREDIENTS
° 1/2 cup unsalted butter, room temperature
° 1/2 cup packed light brown sugar
° 1 1/2 teaspoons of pure vanilla extract
° 1/4 teaspoon salt
° 1 cup flour
° 1 cup pecan, chopped

Preheat oven to 350 degrees, with shelves in the upper and lower thirds. In a big bowl, employ an electric mixer, whisk butter & sugar until light & fluffy. Beat in vanilla and salt. With a mixer at least, add flour gradually, and only beat until blended. Fold in pecans.

Roll the dough into 1 1/2 inch balls, and place on 2 baking sheets, 2 inches apart. With a wet glass bottom, each ball flattens easily.

Bake until biscuits are golden brown, 15-17 minutes, and rotate halfway.
