1 lb ground beef
1 small onion, diced
salt & pepper, to taste
2 tbsp. Taco seasoning
1 tsp. garlic powder
1 cup long-grain white rice, SEE NOTE
1 1/2 cups beef broth
1 15 oz. can corn, drained
8 oz. tomato sauce
1/2 cup salsa
1 cup shredded cheese
Step 1: In a large skillet, cook the ground beef seasoned with salt and pepper over medium-high heat until brown. When done, drain any excess grease.
Step 2: Place the pan back into the stove. Sprinkle the beef with garlic powder followed by taco seasoning.
Step 3: Add the rice into the pan along with the broth, corn, tomato sauce, and salsa. Stir well.
Step 4: Bring to a boil and cover the pan. Adjust the heat to low and continue to simmer for about 18 to 20 minutes or until the rice is tender.
Step 5: Sprinkle the cheese on top and cover again. Allow the cheese to melt for about 2 to 3 minutes.
