1 1/2 cups flour

1 cup granulated sugar

3/4 cup oil

2 spotted bananas, mashed

2 eggs, beaten

1/2 cup canned pineapple chunks, undrained

1/2 cup chopped pecans

1/4 cup raisins

1/2 tablespoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon


Preheat the oven to 350°F and generously grease and flour a 9×5 inch loaf pan.

In a medium-sized bowl, combine flour, baking soda, salt, sugar, and cinnamon, whisking them together. Add eggs and oil to the dry mixture, stirring until well combined.

Gently fold in the vanilla, pineapple, banana, pecans, and raisins, and then pour the batter into the prepared pan.

Bake in the preheated oven for approximately 1 hour, or until a toothpick inserted into the center comes out clean. Begin checking for doneness at 45 minutes for added caution. If the cake is browning too quickly, cover it with a piece of aluminum foil.
