Chicken:
1 tbsp butter
1.5 lb boneless, skinless chicken breast (4 small or 2 large, halved)
Salt
¼ tsp lemon pepper seasoning
¼ tsp paprika
Creamed Spinach:
1 tbsp vegetable oil
10 oz fresh spinach
4 garlic cloves, minced
⅔ cup half and half
⅔ cup shredded mozzarella cheese
Other Ingredients:
1 tbsp vegetable oil
4 oz sliced mushrooms
4 slices cooked bacon, chopped
4 slices Pepper Jack or Monterey Jack cheese
Preheat oven to 375°F. Grease a baking dish.
Season chicken with salt, lemon pepper, and paprika. Place in baking dish and bake for 15-20 minutes.
For creamed spinach: Heat oil in a skillet. Add spinach and cook for 1-2 minutes. Add garlic and half and half. Bring to a boil, then add mozzarella cheese. Stir until melted and smooth. Season with salt.
Cook mushrooms in a separate pan until caramelized.
Remove chicken from oven. Top with creamed spinach, bacon, mushrooms, and cheese slices. Bake for 15-20 more minutes until chicken is cooked through. Broil for 2-4 minutes if desired.
