Pineapple Quick Bread

For the Bread:

⅛ tsp salt

½ cup softened butter

1 cup crushed pineapple, drained (reserve the liquid)

2 large eggs

1 ½ cups all-purpose flour

¼ cup pineapple liquid from the can

¼ cup granulated sugar

2 tbsp milk

2 tsp baking powder

For the Glaze:

2 tbsp pineapple liquid from the can

1 cup confectioners sugar

1 tsp vanilla extract


Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare Dry Ingredients: In a medium-sized mixing bowl, sift together 1 ½ cups of flour, ⅛ tsp salt, and 2 tsp baking powder.

Mix Wet Ingredients: In a separate bowl, beat ½ cup softened butter and ¼ cup granulated sugar until smooth. Add 2 large eggs and mix thoroughly.

Combine Ingredients: Gradually add the reserved ¼ cup pineapple liquid and sifted dry ingredients into the butter mixture, alternating between the two. Mix in 2 tbsp milk and gently fold in 1 cup crushed pineapple.

Bake the Bread: Transfer the batter into a greased loaf pan, spreading it evenly. Bake for 50-55 minutes or until a skewer inserted into the center comes out clean.

Cool the Bread: Allow the loaf to cool in the pan for 10-15 minutes, then transfer it to a cooling rack.

Adding the Glaze:

Prepare the Glaze: In a small bowl, mix 2 tbsp pineapple liquid, 1 cup confectioners sugar, and 1 tsp vanilla extract until smooth.

Glaze the Bread: Drizzle the glaze over the fully cooled loaf and let it set before serving.
