INGREDIENTS
° 1 tablespoon of oil
° 1-14 oz kielbasa – sliced and chopped
° 1 medium onion, sliced and chopped
° 6 medium sized potatoes – peeled, washed, and sliced - I used a ° mandolin to keep skinnier – about 1/4 inch
° 2 cups cheddar cheese or your favorite shredded cheese
* White sauce
° 3 1/2 tablespoons butter
° 4 1/2 tablespoons flour
° 1 1/2 c chicken broth
° 1 c heavy cream
° 1/2 c milk
° 1/4 teaspoon dried thyme
° 1/2 – 3/4 teaspoon kosher salt
° 1/2 teaspoon pepper
I bought several episodes of Kielbasa the last time it was selling on..the kids suggested some kind of sweet potato for dinner so that’s what I put together, and I can add, it was creamy, rich and cheesy good! Real comfort food!
