Ground Beef and Peppers Skillet
INGREDIENTS

1 chopped Onion

½ Red Bell Pepper, chopped

½ Green Bell Pepper, chopped

½ Yellow Bell Pepper, chopped

2 tsp Minced Garlic

½ tsp Dried Oregano

½ tsp Dried Basil

Salt and Pepper, to taste

1 can Diced Tomatoes

2 cups Beef Broth

⅔ cup Rice

1 ½ cups Shredded Cheddar Cheese

INSTRUCTIONS

In a skillet over medium-high heat, combine ground beef, chopped onion, and bell peppers. Cook until the vegetables are tender and the beef is fully browned. Drain any excess fat.

Add minced garlic, oregano, basil, salt, and pepper to the skillet. Stir well and sauté for another 30 seconds.

Stir in diced tomatoes, beef broth, and rice.

Bring the mixture to a light boil, then reduce the heat to simmer. Cover and cook for 20 minutes.

Sprinkle shredded cheddar cheese over the mixture. Cover the skillet and cook until the cheese is melted.
