1 cup (or 2 sticks) soft unsalted butter
1/2 cup powdered sugar
2 cups all-purpose flour
1 cup finely chopped walnuts
1 tsp vanilla extract
Pinch of salt
Additional powdered sugar for rolling
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
Cream together butter and powdered sugar until smooth and fluffy.
Gradually add flour to the butter mixture, mixing until just combined.
Fold in chopped walnuts, vanilla extract, and a pinch of salt.
Roll dough into 1-inch balls and place them on the prepared baking sheet.
Bake for 12-15 minutes until bottoms are lightly golden.
Let cookies cool slightly, then roll gently in additional powdered sugar.
Allow cookies to cool completely on a wire rack. Optionally, roll them in powdered sugar again for an extra snowy touch.
