MEATBALL BOATS
INGREDIENTS

1 pound ground beef

1 large egg

1/3 cup breadcrumbs

1/4 cup Parmesan cheese

1 tablespoon minced garlic

1 tablespoon fresh chopped parsley

Salt and pepper to taste

1 tablespoon olive oil

2 cups marinara sauce

8 mini hoagie rolls

12 slices Asiago cheese

INSTRUCTIONS

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

Prepare a baking pan with nonstick spray.

In a bowl, combine ground beef, egg, breadcrumbs, Parmesan cheese, minced garlic, and parsley. Mix well with your hands. Season with salt and pepper.

Use an ice cream scoop to form meatballs and set aside.

Heat olive oil in a skillet over medium heat. Add meatballs and cook for about 5 minutes, searing on all sides.

Transfer seared meatballs onto a parchment-covered baking pan and bake in the preheated oven for 12 minutes. Remove from oven and set aside.

Cut an oval on the top of each hoagie roll, leaving about 1/2 inch on the ends and sides. Scoop out the top of the roll without cutting through to the bottom half.

Hollow out the top of each roll using a knife.

Place the rolls on the baking pan and lay one slice of Asiago cheese in the hollowed-out area of each roll. Return to the oven and bake for 8 minutes.

Remove from the oven and top each roll with 2 tablespoons of marinara sauce.

Place 3 meatballs on top of the marinara sauce in each roll.

Add more marinara sauce on top of the meatballs and sprinkle with grated Parmesan cheese.

Return to the oven and bake for an additional 6-8 minutes.
